A fresh yet simple recipe !
This is a very simple recipe to make, it is inspired from the famous Spanish tapas : « Pa amb tomaquet » !
This recipe is excellent as an appetizer or a snack ! It is even more delicious with a cucumber tree syrup as a drink.

Here is the recipe !
Ingredients :
- 600 g of fresh or frozen bilimbi (cucumber tree)
- Half shallot
- Half tomato or 1 canned peeled tomato
- Salt et pepper (optional)
- Olive oil
- 1 garlic clove
- Bread
Préparation
- Mix the bilimbis until you obtain a paste
- Pour the preparation into a strainer to collect the juice.
- Set the rest of the juice to make Bilimbi syrup
- Keep the paste to prepare the preparation for the tapas.
- Add shallot and tomato to the bilimbi paste. At this stage, you could also add some salt and pepper as per your taste (optional).
- Cut your bread and rub the garlic on the bread. If you would like to add a more crispy touch to the bread, you can put it in the oven for 5 min at 180°.
- Spread the bilimbi preparation on the bread and pour a dash of olive oil and it’s ready ! 🙂
