Bilimbi (cucumber tree) tapas !

A fresh yet simple recipe !

This is a very simple recipe to make, it is inspired from the famous Spanish tapas : « Pa amb tomaquet » !

This recipe is excellent as an appetizer or a snack ! It is even more delicious with a cucumber tree syrup as a drink.

Here is the recipe !

Ingredients :

  • 600 g of fresh or frozen bilimbi (cucumber tree)
  • Half shallot
  • Half tomato or 1 canned peeled tomato
  • Salt et pepper (optional)
  • Olive oil
  • 1 garlic clove
  • Bread

Préparation

  • Mix the bilimbis until you obtain a paste
  • Pour the preparation into a strainer to collect the juice.
  • Set the rest of the juice to make Bilimbi syrup
  • Keep the paste to prepare the preparation for the tapas.
  • Add shallot and tomato to the bilimbi paste. At this stage, you could also add some salt and pepper as per your taste (optional).
  • Cut your bread and rub the garlic on the bread. If you would like to add a more crispy touch to the bread, you can put it in the oven for 5 min at 180°.
  • Spread the bilimbi preparation on the bread and pour a dash of olive oil and it’s ready ! 🙂
