Bilimbi Syrup (cucumber tree)

The inescapable fruit of Mahoran gardens !

We see bilimbis everywhere in Mayotte and we often believe it is rather reserved for salty recipes ! Believe it or not it can actually be used to make a delicious syrup to drink during hotter seasons !

This recipe is excellent for kids or people who want to appreciate an alcohol free beverage.

/! \ A small quantity of syrup mixed with water is enough for the recipe in order to avoid the sour flavour that can come with bilimbi.

Here is the recipe !

Ingredients :

  • 600 g of fresh bilimbi or frozen
  • Water
  • Sugar
  • 1 teaspoon of salt (optional)

Préparation

  • Mix the bilimbis until you obtain a paste
  • Pour the preparation into a strainer to collect the juice.
  • Set the rest of the paste to make tapas or toasts
  • Pour water in a pan with sugar and put on medium heat. The amount of sugar should be equal to the amount of bilimbi juice you get.
  • The mix in the pan should be a bit sticky and then remove the pan from heat and add the juice of bilimbi
  • Let it cool then put in the fridge
  • You have have your syrup with some water as per your taste ! 😉
